More than 60 professional chefs and representatives from leading F&B businesses across Central Vietnam gathered at the recent Chef Workshop in Da Nang, co-organized by Nam Duong and Nghi Academy. The event offered an inspiring space for exchange, knowledge sharing, and culinary experience, centered on a highly practical theme: “How to Create and Develop Signature Dishes for F&B Businesses.”
Held on the morning of December 9, the workshop addressed a key challenge facing today’s culinary and F&B community in an increasingly competitive market: how to create a dish that carries a distinct identity, operates efficiently, and remains sustainable for long-term business growth.

At the workshop, Chef Nguyen Quoc Nghi—Chairman of the Quang Nam Professional Chefs Association and Founder of Nghi Academy—shared practical insights drawn from his professional journey in developing signature dishes.
According to Chef Quoc Nghi, a sustainable signature dish is built on three core elements: familiar ingredients elevated through unique cooking techniques; a compelling culinary story; and an optimized, scalable preparation process. Among these, seasoning plays a foundational role, determining both the depth of flavor and the consistency required for long-term menu application.
